Ingredients:

Instructions:
1. Boil the Milk
Pour the milk into a heavy-bottomed pan or non-stick pan. Bring it to a boil on medium heat, stirring occasionally to prevent it from sticking to the bottom.
2. Simmer and Reduce
Once boiled, lower the heat and continue to simmer the milk. Keep stirring frequently to avoid burning. The milk will start thickening as water evaporates, turning creamy and dense.
3. Add Baking Soda (Optional)
When the milk reduces to about half, add baking soda dissolved in a little water. This helps in softening the milk solids and gives the milk cake a nice texture. Stir well.
4. Add Sugar
Gradually add sugar to the thickened milk while stirring continuously. The mixture will become a bit liquidy again as the sugar melts. Keep stirring and cooking on low heat.
5. Cook Until Thick and Brown
Continue to cook and stir until the mixture thickens significantly and starts leaving the sides of the pan. The color will change to a golden or light brown shade, and the mixture will have a caramelized aroma.
6. Add ghee and cardamom Powder
Add ghee and cardamom powder to the thick mixture. Stir well to combine. Cook for another 2-3 minutes.
7. Set the Milk Cake
Grease a plate or tray with ghee. Pour the hot mixture onto it and spread evenly. Sprinkle chopped nuts on top and gently press them into the mixture.
8. Cool and Cut
Let the milk cake cool completely at room temperature. Once set, cut into squares or diamond shapes.
