Ingredients (Serves 2)
· 4 slices of whole wheat bread
· 100g paneer (cottage cheese), crumbled
· 1 small onion, finely chopped
· 1 small tomato, finely chopped
· ½ capsicum, finely chopped
· 1 green chili, finely chopped (optional)
· ½ tsp turmeric powder
· ½ tsp red chili powder
· ½ tsp garam masala
· 1 tsp oil
· salt to taste
· 1-2 tsp green chutney (optional)
· butter or olive oil for grilling
Instructions
1. Prepare the Paneer Bhurji
o Heat oil in a pan. Add onions and sauté until translucent.
o Add tomatoes, capsicum, and green chili. Cook for 2–3 minutes.
o Add turmeric, red chili powder, garam masala, and salt. Mix well.
o Add crumbled paneer and cook for 2–3 minutes until all ingredients are well combined. Remove from heat.
2. Assemble the Sandwich
o Spread green chutney (optional) on one slice of bread.
o Place a generous portion of paneer bhurji on the bread.
o Cover with another slice of bread.
3. Grill the Sandwich
o Brush lightly with butter or olive oil.
o Grill on a non-stick pan or sandwich maker until golden brown and crispy.
4. Serve Hot
o Cut diagonally and serve with ketchup or mint chutney.
