🥒 Vellarikkai Payasam Recipe

(Cucumber kheer - A Refreshing, Light Dessert)

Ingredients:

  • 1 medium-sized cucumber (Vellarikkai)
  • ½ cup grated coconut (fresh or desiccated)
  • 1 ½ cups full-fat milk (or coconut milk for a vegan version)
  • ½ cup sugar (adjust to taste)
  • 1 tbsp ghee
  • 8–10 cashews
  • 8–10 raisins
  • ¼ tsp cardamom powder
  • A pinch of saffron strands (optional)
  • A pinch of salt

🧑‍🍳 Instructions:

1. Prepare the Cucumber:

o Peel the cucumber and grate it finely using a box grater or a food processor.

o Squeeze out excess water from the grated cucumber to avoid making the payasam too watery.

o Set the grated cucumber aside.

2. Make Coconut Milk Paste:

o In a blender, combine grated coconut with a little water to make a smooth paste.

o Strain the mixture using a fine mesh sieve or cheesecloth to extract fresh coconut milk. Alternatively, you can use store-bought coconut milk.

3. Cook the Cucumber:

o In a pan, heat 1 tbsp ghee and sauté the grated cucumber for 2–3 minutes on low heat to remove the raw taste and to soften it slightly.

4. Add Milk and Cook:

o Add the full-fat milk (or coconut milk for a vegan option) to the sautéed cucumber.

o Let it simmer for 5–7 minutes on low flame, allowing the flavors to blend. Stir occasionally to prevent the milk from sticking to the bottom.

5. Sweeten the Payasam:

o Add sugar to the milk and cucumber mixture, stirring until the sugar dissolves completely.

o Add a pinch of salt and cardamom powder to enhance the flavor. Optionally, add saffron strands for a beautiful color and aroma.

o Continue cooking on low heat for another 5 minutes until the payasam thickens slightly.

6. Prepare the Garnish:

o In a small pan, heat 1 tsp ghee and fry the cashews until golden brown. Add raisins and fry them until they puff up.

o Add the fried cashews and raisins to the payasam and mix well.

7. Serve:

o Serve the Vellarikkai Payasam warm or chilled, as per your preference.

💡 Tips for Perfect Vellarikkai Payasam:

  • Use fresh cucumber for a crisp texture and mild flavor. Avoid bitter cucumbers for a smooth taste.
  • Squeeze out excess water from the grated cucumber to ensure the payasam isn't too watery.
  • Adjust sweetness based on the natural sweetness of the cucumber. Start with a small amount of sugar and add more if needed.
  • Use full-fat milk for a richer, creamier texture, or opt for coconut milk if you prefer a vegan version.
  • Cardamom and saffron add a wonderful aroma, but you can skip them if you prefer a simpler flavor.
  • For extra richness, you can add a spoon of condensed milk or a few spoons of thick coconut cream.
