Tomato rice is a flavorful and short South indian dish made with ripe tomatoes, spices, and rice. Here's a simple step-by-step procedure to make it:

Substances

1 cup cooked rice (preferably cooled)

2 medium ripe tomatoes (chopped)

1 medium onion (sliced)

2 inexperienced chilies (slit)

1 tsp mustard seeds

1 tsp urad dal (non-obligatory)

1 tsp chana dal (optional)

1 sprig curry leaves

¼ tsp turmeric powder

½ tsp purple chili powder

½ tsp garam masala (non-obligatory)

2 tbsp oil or ghee

Salt to flavor

Sparkling coriander leaves for garnish

Step-by-step procedure

Prepare dinner rice in advance and allow it to cool. You could use leftover rice properly as well.

Heat oil in a pan. Add mustard seeds. Once they splutter, add urad dal and chana dal, and fry until golden.

Add inexperienced chilies, curry leaves, and sliced onions. Sauté till the onions are soft and slightly golden.

Add the chopped tomatoes and cook dinner until they soften and oil begins to split. Mash the tomatoes as they cook dinner.

Upload turmeric, red chili powder, and garam masala. Mix nicely and cook the masala till the raw smell is going away.

Add salt to taste and cook for any other 1–2 mins until the whole thing blends properly.

Upload the cooked rice and blend gently till the rice is flippantly lined with the tomato aggregate.

Garnish with clean coriander leaves.

Serve warm with raita, papad, or undeniable curd.

This tangy, spicy rice is best for lunchboxes or a short dinner!
