1–2 green chilies
1-inch ginger

Water as needed
Oil or ghee for cooking
Method
Soak the dal for 3–4 hours. Drain well.
Blend soaked dal with green chilies and ginger into a smooth batter (add minimal water).
Transfer to a bowl; add salt, turmeric, cumin, onion, carrot, and coriander. Mix well.
Heat a non-stick pan or tawa. Pour a ladle of batter and spread into a thin circle.
Drizzle a few drops of oil around the edges.
Cook on medium flame until golden and crisp; flip and cook the other side.
Serve hot with chutney.

Ingredients
10–12 dried red chilies (soaked in hot water for 20 minutes)

½ tsp sugar
Salt to taste
2–3 tbsp water (as needed)
Method
Grind soaked red chilies, garlic, and ginger into a coarse paste.
Heat oil in a pan; sauté the paste on low flame for 4–5 minutes.
Add soy sauce, ketchup, vinegar, sugar, and salt.
Cook until oil separates and chutney thickens.
Cool and store in an airtight jar (refrigerate up to 1 week).
