Instructions

Prepare the Flattened Rice:

Rinse the poha in water and drain completely. Keep it aside to soften slightly.

Cook tamarind Paste:

In a pan, mix tamarind paste with 1/2 cup water, jaggery, turmeric, and salt.

Heat until the jaggery melts and the mixture comes to a gentle simmer.

Tempering:

In another pan, heat oil and add mustard seeds. Let them splutter.

Add urad dal, dried red chilies, curry leaves, and chopped green chilies. Sauté until aromatic.

Combine Poha and Tamarind:

Add softened poha to the tamarind mixture and mix gently.

Pour the tempering over the poha and mix well.

Add roasted peanuts or cashews for crunch.

Garnish and Serve:

Garnish with fresh coriander leaves.

Serve warm as a tangy, spicy, and flavorful meal or snack.
