Ingredients:
· 1 medium cauliflower, cut into florets
· 1 onion, finely chopped
· 2 tomatoes, chopped
· 1–2 green chilies, slit
· 1 teaspoon ginger-garlic paste
· 1 teaspoon turmeric powder
· 1 teaspoon cumin seeds
· 1 teaspoon coriander powder
· ½ teaspoon garam masala
· 1 teaspoon red chili powder (optional)
· 2 tablespoons oil (preferably olive or sunflower)
· salt to taste
· Fresh coriander leaves for garnish
For Tempering (optional):
· 1 teaspoon mustard seeds
· 1 sprig curry leaves
Method:
1. Prep the Cauliflower: Wash and cut the cauliflower into medium-sized florets. Optionally, blanch them in boiling water for 2–3 minutes to reduce cooking time and retain nutrients.
2. Cook the Base: Heat oil in a pan. Add cumin seeds, mustard seeds, and curry leaves (if using). Once they splutter, add chopped onions and sauté until golden brown.
3. Add Spices and Tomatoes: Stir in ginger-garlic paste, green chilies, turmeric powder, coriander powder, red chili powder, and salt. Sauté for a minute, then add chopped tomatoes. Cook until tomatoes soften and oil separates.
4. Cook Cauliflower: Add the cauliflower florets to the pan. Mix well with the masala, cover, and cook on medium heat for 8–10 minutes until tender. Stir occasionally to prevent sticking.
5. Finish with Garam Masala: Sprinkle garam masala and mix gently. Garnish with fresh coriander leaves. Serve hot with rice, chapati, or as a side dish in a thali.
