
Masala Vadai Recipe
Masala Vadai, also known as Paruppu Vadai, is a popular South indian snack made from chana dal (split chickpeas) and aromatic spices. Crispy on the outside and soft on the inside, these fritters are perfect for tea-time, festivals, or as an appetizer. They are high in protein, fiber, and flavor.
Ingredients:
· 1 cup chana dal (split bengal gram)
· 2 tablespoons rice flour (optional, for extra crispiness)
· 1 small onion, finely chopped
· 2 green chilies, finely chopped
· 1 teaspoon ginger, grated
· 2 tablespoons fresh coriander leaves, chopped
· 1 teaspoon cumin seeds
· 1–2 dried red chilies, finely chopped (optional)
· salt to taste
· oil for deep frying
Method:
1. Soak Chana Dal: Wash and soak chana dal in water for 2–3 hours. Drain well.
2. Grind Dal: Grind the soaked dal coarsely using a food processor. The mixture should be coarse and slightly chunky, not a smooth paste.
3. Mix Ingredients: Transfer the ground dal to a bowl. Add chopped onions, green chilies, ginger, coriander leaves, cumin seeds, and salt. Mix well. Optionally, add rice flour to help bind the mixture and make the vadai crispier.
4. Shape the Vadai: Take small portions of the mixture and flatten slightly into round patties with your palms.
5. Deep Fry: Heat oil in a deep frying pan over medium heat. Fry the vadai in batches until golden brown and crisp on both sides. Remove and drain excess oil on paper towels.
6. Serve Hot: Serve masala vadai hot with coconut chutney, tomato chutney, or as a snack with tea or coffee.
