
Lemon ginger rasam Recipe

· 2 medium-sized tomatoes, chopped
· 1–2 teaspoons tamarind paste

· 1–2 green chilies, slit
· 1/4 teaspoon turmeric powder

· 1 teaspoon cumin seeds
· 1–2 tablespoons lemon juice (adjust to taste)
· 1–2 teaspoons coriander leaves, chopped
· 2 cups water
· 1 teaspoon oil or ghee
· salt to taste
For Tempering:
· 1 teaspoon mustard seeds
· 1 teaspoon cumin seeds
· 1–2 dried red chilies
· 1 sprig curry leaves
Method:
1. Prepare tamarind Base: Soak tamarind paste in a little warm water for 5 minutes. Extract the juice and set aside.
2. Cook Tomatoes: In a pot, heat oil or ghee. Add mustard seeds, cumin seeds, dried red chilies, and curry leaves. Once they splutter, add chopped tomatoes, turmeric, and green chilies. Cook until the tomatoes soften.
3. Add tamarind and Spices: Pour in the tamarind water, crushed black pepper, and grated ginger. Add 2 cups of water and bring to a gentle boil. Simmer for 5–7 minutes.
4. Finish with Lemon: Turn off the heat and stir in freshly squeezed lemon juice. Garnish with chopped coriander leaves.
5. Serve Hot: Serve immediately as a comforting soup or with steamed rice.
