Vaazha Thandu (Banana Stem) Chutney Recipe

Ingredients:

  • 1 medium vaazha thandu (banana stem)
  • 2–3 green chilies (adjust to taste)
  • 1 small piece of ginger
  • 1–2 tsp tamarind pulp
  • ½ tsp cumin seeds
  • ½ tsp salt (or to taste)
  • 1 tsp oil
  • ½ tsp mustard seeds
  • A few curry leaves
  • A pinch of asafoetida (hing)

Instructions:

Prepare banana Stem: Peel the outer layers of the banana stem. Slice thinly and remove the hard core. Chop into small pieces. Soak in water with a little lemon juice to prevent discoloration.

Tempering (Tadka): Heat oil in a small pan. Add mustard seeds. When they splutter, add curry leaves and a pinch of hing. Pour the tempering over the chutney and mix well.
