Instructions:
1. Prepare the Khoya
· In a heavy-bottomed pan, cook the khoya (mawa) over low to medium heat, stirring constantly. The khoya should be soft and slightly browned but not burnt. This will take around 10-12 minutes.
2. Add ghee and Sugar
· Once the khoya is cooked, add 2 tablespoons of ghee to the pan, allowing it to blend with the khoya.
· Then, add sugar and stir continuously until the sugar dissolves completely. You’ll notice the mixture becoming slightly sticky.
3. Add cardamom & Nuts
· Sprinkle in cardamom powder for that classic aromatic flavor.
· Add the chopped cashews, almonds, and raisins. Continue to stir for a few more minutes to ensure the nuts are evenly distributed.
4. Optional Step: Add Milk
· If the mixture is too thick, add a tablespoon or two of milk to soften it and help combine everything into a smooth dough-like consistency.
5. Cool the Mixture
· Let the khoya mixture cool down for about 10-15 minutes, but it should still be warm when you begin rolling the laddus.
6. Shape the Laddus
· Grease your palms with ghee and take a small portion of the warm mixture.
· Roll it into small round balls. If desired, you can also press a few chopped nuts on top of each laddu for decoration.
7. Allow to Set
· Let the laddus sit at room temperature for about 30 minutes to set and firm up.
