Ingredients (Serves 2)

· 4 slices of whole wheat bread

· 100g paneer, grated or crumbled

· 50g grated cheese (mozzarella or cheddar)

· 1 small onion, finely chopped

· 1 small tomato, finely chopped

· 1 small capsicum, finely chopped

· 1-2 green chilies, finely chopped (optional)

· 1 tsp olive oil or butter

· salt and pepper to taste

· Chaat masala or Italian herbs (optional)

Instructions

1. Prepare the Filling:

· In a bowl, mix crumbled paneer, chopped onion, tomato, capsicum, and green chilies.

· Add salt, pepper, and chaat masala/Italian herbs for flavor.

2. Assemble the Sandwich:

· Spread butter or olive oil lightly on bread slices.

· Place a generous layer of paneer mixture on one slice.

· Sprinkle grated cheese on top.

· Cover with another bread slice.

3. Toast the Sandwich:

· Heat a sandwich toaster, grill, or pan.

· Toast the sandwich for 3–5 minutes until the bread is golden brown and the cheese melts.

4. Serve Hot:

· Cut the sandwich diagonally.

· Serve with green chutney, tomato ketchup, or a side salad.
