Rava Dosa is a crispy, thin South indian crepe made with semolina (rava) and rice flour. It’s quick to prepare, doesn’t require fermentation, and tastes amazing with chutney or sambar.
Ingredients
For the batter:
· 1 cup semolina (rava/sooji)
· 1/2 cup rice flour
· 1/4 cup all-purpose flour (optional, for extra crispiness)
· 2–3 green chilies, finely chopped
· 1 tsp ginger, grated
· 1 small onion, finely chopped
· 1/4 tsp cumin seeds
· 1/4 tsp black pepper powder
· 1 tbsp chopped coriander leaves
· salt to taste
· 2 ½ cups water (adjust for consistency)
Instructions
1. Prepare the Batter
· In a bowl, mix rava, rice flour, and all-purpose flour.
· Add salt, cumin seeds, black pepper, green chilies, ginger, and coriander leaves.
· Slowly add water while stirring to make a thin, pourable batter (like pancake batter).
· Let it rest for 10–15 minutes.
2. Heat the Pan
· Use a non-stick or cast-iron pan for best results.
· Heat it on medium-high and brush lightly with oil.
3. Make the Dosa
· Pour a ladleful of batter from the edges, letting it spread naturally in a thin layer.
· Drizzle a few drops of oil around the edges for crispiness.
· Cook until the edges lift easily and the bottom turns golden brown.
4. Flip (Optional)
· You can serve it without flipping for extra crispiness.
· If desired, flip carefully and cook for another 30 seconds.
5. Serve Hot
· Serve immediately with coconut chutney, tomato chutney, or sambar.
Tips for Perfect Rava Dosa
1. Thin Batter is Key: The batter should be pourable but not watery.
2. No Fermentation Needed: Rava dosa is instant, unlike regular dosa.
3. Use a Hot Pan: Ensures dosa spreads well and becomes crispy.
4. Add Chopped onions Last: Sprinkle onions after pouring the batter to avoid sticking.
5. Serve Immediately: Rava dosa loses crispiness if kept aside.
6. Experiment with Flavors: Add curry leaves, grated carrots, or bell peppers for variety.
Bottom Line: Rava Dosa is a quick, crispy, and flavorful South indian delicacy. With these tips, even beginners can make restaurant-style dosas at home.
