Kaara Boondi Recipe

Ingredients:

  • 1 cup gram flour (besan)
  • 1 tsp rice flour (optional, for extra crispiness)
  • ½ tsp turmeric powder
  • ½ tsp red chili powder (adjust to taste)
  • ¼ tsp asafoetida (hing)
  • Salt to taste
  • ½ cup water (adjust for batter consistency)
  • Oil for deep frying
  • For tempering (optional):
    • 1 tsp mustard seeds
    • 1–2 curry leaves

Instructions:

Prepare Batter:

In a mixing bowl, combine gram flour, rice flour, turmeric powder, red chili powder, asafoetida, and salt.

Gradually add water and whisk into a smooth, lump-free batter. It should be slightly thick but pourable.

Heat Oil:

Heat oil in a deep frying pan on medium heat.

Fry Boondi:

Using a perforated spoon or a boondi ladle, pour small droplets of batter into hot oil.

Fry in batches, stirring gently, until the boondi turns golden brown and crisp.

Remove using a slotted spoon and drain on paper towels.

Tempering (Optional):

Heat a little oil in a small pan, add mustard seeds and curry leaves. Pour over the fried boondi for added aroma and flavor.

Cool and Store:

Allow the boondi to cool completely before storing in an airtight container to retain crispiness.

Tips for Best Results:

  • Batter consistency is key: too thin will make boondi flat, too thick will make it hard.
  • Maintain medium heat while frying to ensure even crispiness without burning.
  • Fry in small batches to avoid overcrowding the pan.
  • Drain excess oil immediately to prevent sogginess.
  • Adding rice flour gives extra crunch.
  • For a healthier version, the boondi can be oven-baked or air-fried.
