1. Heat oil & temper Spices
Heat oil in a pan over medium flame. Add cumin seeds and let them sizzle. Then sauté the chopped onions until golden brown.

2. Add Aromatics
Mix in ginger-garlic paste and green chilies. Sauté for 1–2 minutes until the raw smell disappears.

3. Add Vegetables & Spices
Add diced mooli and potatoes. Sprinkle turmeric, red chili, and coriander powders. Mix well so the spices coat the vegetables evenly.

4. Cook the Sabji
Add a splash of water (about 1/4 cup) and cover the pan. Cook on low-medium heat for 10–12 minutes, stirring occasionally, until the vegetables are soft but not mushy.

5. Final Touch
Season with salt and mix gently. Garnish with freshly chopped coriander leaves. Serve hot with roti, paratha, or rice.
