Thaen Mittai Recipe
Ingredients:
- 1 cup jaggery (grated)
- ½ cup honey (preferably raw or organic)
- ¼ cup water
- 1 tsp ghee (optional, to grease molds or hands)
- A few cardamom pods (optional, for flavor)
- Nuts like cashews or almonds (optional)
Instructions:
Prepare jaggery Syrup:
In a heavy-bottomed pan, combine jaggery and water.
Heat on low-medium flame, stirring continuously until the jaggery dissolves completely.
Strain to remove impurities if necessary.
Add Honey and Flavor:
Reduce the heat and add honey gradually. Mix well.
Crush cardamom pods and add them for aroma and flavor.
Stir continuously to prevent sticking.
Cook to Hard Ball Stage:
Continue heating the mixture until it reaches the “hard ball” stage (drop a small amount in cold water; it should form a firm ball).
Remove from heat.
Shape Candy:
Grease a plate or tray with a little ghee.
Pour the mixture onto the tray and spread evenly.
Allow it to cool slightly, then cut into desired shapes using a knife.
Optionally, press nuts into the candy before it hardens completely.
Cool and Store:
Allow the candies to cool completely.
Store in an airtight container at room temperature.
Tips for Best Results:
- Use a heavy-bottomed pan to avoid burning jaggery or honey.
- Stir continuously to prevent crystallization and sticking.
- Cook on low heat; high heat may caramelize the jaggery too much.
- Test the syrup consistency in cold water before shaping.
- Adding nuts enhances texture and nutritional value.
- Store in a dry place; humidity can make the candy sticky.
