Ingredients:
- 2 cups ripe tomatoes, chopped
- 2–3 green chilies or 1–2 tsp red chili powder (adjust to taste)
- 1 tsp mustard seeds
- 1 tsp fenugreek seeds (methi seeds)
- 1/2 tsp turmeric powder
- 1–2 tsp asafoetida (hing)
- 2–3 tbsp oil (preferably sesame oil)
- 1–2 tsp jaggery (optional, balances tanginess)
- Salt to taste
- Curry leaves (optional, for aroma)
Instructions:
1. Prepare tomatoes:
Wash and chop tomatoes into small pieces. You can remove seeds for a smoother texture if desired.
2. Tempering:
Heat oil in a pan. Add mustard seeds and fenugreek seeds, letting them splutter. Add curry leaves and asafoetida, sauté briefly.
3. Cook tomatoes:
Add chopped tomatoes, turmeric powder, and green chilies or red chili powder. Mix well and cook on medium flame for 8–10 minutes until the tomatoes turn soft and slightly mushy.
4. Add jaggery (optional):
Add jaggery to balance the tanginess, especially if using very sour tomatoes. Stir well and cook for another 2–3 minutes.
5. Cool and store:
Let the pickle cool completely. Transfer to a clean, dry airtight container. Store in the refrigerator for 1–2 weeks.
