Ingredients:

  • 1 cup rice flour
  • 2 cups milk (full cream or toned)
  • 1 cup jaggery, grated or powdered (adjust sweetness)
  • 1/2 cup grated fresh coconut
  • 1/2 tsp cardamom powder
  • A pinch of salt
  • Ghee (clarified butter) for greasing and garnish
  • Water, if needed

Instructions:

1. Boil Milk: In a heavy-bottomed pan, bring the milk to a boil.

2. Add Rice Flour: Lower the heat and slowly add the rice flour while stirring continuously to avoid lumps. Stir until the mixture thickens and forms a soft dough that leaves the sides of the pan.

3. Add jaggery & Coconut: Add grated jaggery, grated coconut, cardamom powder, and a pinch of salt. Mix well and cook for 2-3 minutes until the jaggery melts and combines smoothly.

4. Cool the Mixture: Remove from heat and allow the dough to cool slightly so it’s easier to handle.

5. Shape Kolukattai: Grease your hands with ghee. Pinch small portions of the dough and shape them into oval or dumpling shapes (kolukattai).

6. Steam: Place the shaped kolukattai in a greased steaming plate or banana leaf. Steam for 10-12 minutes until cooked through.

7. Serve: Drizzle with a little ghee and serve warm as a sweet snack or dessert.
