Ingredients:

  • 1 cup cooked rice (preferably cooled and fluffy)
  • 1 cup fresh curry leaves, washed and chopped finely
  • 2 tbsp oil (coconut oil preferred)
  • 1 tsp mustard seeds
  • 1 tsp urad dal (split black gram)
  • 1 tsp chana dal (split bengal gram)
  • 2 dried red chilies
  • 1-2 green chilies, chopped (optional)
  • 1/4 tsp asafoetida (hing)
  • 1/2 tsp turmeric powder
  • Salt to taste
  • 1 tbsp roasted peanuts or cashews (optional)
  • 1 tbsp lemon juice (optional)

Instructions:

1. Heat Oil: Heat oil in a pan on medium heat. Add mustard seeds and let them splutter.

2. Add Dal & Spices: Add urad dal, chana dal, dried red chilies, and sauté until golden.

3. Add curry leaves & Chilies: Add chopped curry leaves, green chilies, and asafoetida. Stir-fry on low heat for 3-4 minutes until the curry leaves become crispy and aromatic.

4. Add turmeric & Salt: Sprinkle turmeric powder and salt. Mix well.

5. Combine Rice: Add the cooked rice to the pan. Mix gently to coat the rice evenly with the curry leaf mixture.

6. Add Nuts & Lemon: Stir in roasted peanuts or cashews if using, and finish with a squeeze of lemon juice for freshness.

7. Serve: Serve warm with yogurt, pickle, or any curry of your choice.
