Ingredients

· All-purpose flour (maida) – 1 cup

· Almonds (badam) – ½ cup, blanched and ground into a paste

· Powdered sugar – ¼ cup (adjust to taste)

· Cardamom powder (elaichi) – ½ tsp

· Ghee or oil – 2 tsp for dough + for deep frying

· Milk or water – as needed to knead the dough

For Garnishing (Optional)

· Chopped almonds

· Rose petals or saffron strands

Instructions

1. Prepare the Dough

1. Mix maida, almond paste, sugar, cardamom powder, and ghee in a bowl.

2. Add milk or water little by little to form a smooth, soft dough.

3. Cover and let it rest for 15–20 minutes.

2. Shape the Puris

1. Divide the dough into small balls.

2. Roll each ball gently into a small, thick disc (like a mini puri).

3. Fry the Badam Puris

1. Heat ghee or oil in a deep pan on medium heat.

2. Fry the puris until golden brown, turning carefully to cook evenly.

3. Remove and drain on paper towels.

4. Serve

· Let them cool slightly and garnish with chopped almonds or saffron if desired.

· Serve warm or at room temperature. They pair wonderfully with tea or as a sweet snack.

💡 Tips for Perfect Badam Puri

· Don’t roll the puris too thin; they should remain soft inside.

· Almond paste adds richness, but you can also mix cashew paste for variation.

· Fry on medium heat, as high heat can burn the puris quickly.
