Thakkali Thokku Recipe (Tomato Thokku)
Components:
5-6 medium ripe tomatoes, finely chopped
2 tbsp oil (ideally sesame oil or any cooking oil)
1 tsp mustard seeds
Half a tsp of fenugreek seeds (methi seeds)
1-2 dried purple chilies
¼ tsp asafoetida (hing)
1 tbsp pink chili powder (modify to taste)
Half tsp turmeric powder
1 tsp jaggery or sugar (elective, balances the tanginess)
Salt to taste.
1 tbsp tamarind paste or a small lemon-sized ball of tamarind soaked in hot water
Instructions:
Cook dinner with the tomatoes.
Heat oil in a pan over medium heat.
Add mustard seeds; when they splutter, add fenugreek seeds, dried red chilies, and asafoetida. Sauté for a few seconds.
Add tomatoes.
Upload chopped tomatoes and blend well.
Prepare dinner on medium warmth, stirring now and again, till the tomatoes soften and the mixture thickens (approximately 15-20 mins.).
Upload spices:
Upload turmeric powder, crimson chili powder, salt, and tamarind paste.
Mix very well and cook for another 10-15 minutes on low heat till the mixture thickens to a chutney-like consistency.
Balance the taste:
Add jaggery or sugar, if you use it, to balance the sourness. Blend properly.
Cool and keep:
Let it cool completely. Keep it in a smooth, airtight container. It maintains well for about a week inside the fridge.
Serving suggestion:
Enjoy Thakkali Thokku with simple rice and ghee or as a tangy aspect for idli, dosa, or chapati.
