Thengai Paal (Coconut Milk) Chutney Recipe
Ingredients:
- ½ cup fresh grated coconut
- ½ cup coconut milk (extracted from fresh coconut or store-bought)
- 2–3 green chilies (adjust to taste)
- 1 small piece of ginger
- 1 tsp tamarind pulp (optional, for tanginess)
- ½ tsp salt (or to taste)
- 1 tsp oil
- ½ tsp mustard seeds
- A few curry leaves
- A pinch of asafoetida (hing)
Instructions:
Prepare Coconut Milk: If using fresh coconut, grind half of it with a little water to extract thick coconut milk. Reserve the rest for blending if needed.
Blend Chutney: In a blender, combine grated coconut, green chilies, ginger, tamarind pulp (if using), and salt. Add coconut milk gradually and grind to a smooth, creamy paste. Adjust consistency by adding water or coconut milk as needed.
Tempering (Tadka): Heat oil in a small pan. Add mustard seeds. Once they splutter, add curry leaves and a pinch of hing. Pour this tempering over the chutney and mix well.
Serve: Serve fresh with idli, dosa, rice, or snacks.
Tips for Best Results:
- Use fresh coconut for a naturally sweet and aromatic flavor.
- Adjust green chilies according to your spice tolerance.
- Coconut milk adds a rich and creamy texture; avoid thinning too much to retain flavor.
- Tempering should be done just before serving to preserve aroma.
- Consume fresh; store in an airtight container in the refrigerator for 1–2 days.
