Kuzhambu Karuvadam Recipe
Ingredients:
- 1 cup tamarind pulp
- ½ cup grated coconut (optional)
- 2–3 tbsp sesame oil
- 1 tsp mustard seeds
- 1 tsp fenugreek seeds
- 2–3 dried red chilies
- 1 tsp black peppercorns
- ½ tsp turmeric powder
- 1–2 sprigs curry leaves
- 1 tsp asafoetida (hing)
- Salt to taste
- 1–2 tbsp jaggery (optional, for balance)
Instructions:
Prepare Tamarind: Soak tamarind in warm water for 15–20 minutes and extract pulp. Set aside.
Roast Spices: Dry roast fenugreek seeds, dried red chilies, and black peppercorns lightly on medium heat until aromatic. Cool completely.
Grind Paste: In a blender, combine roasted spices, grated coconut (optional), turmeric powder, and tamarind pulp. Grind into a smooth or coarse paste as preferred.
Tempering: Heat sesame oil in a pan. Add mustard seeds and let them splutter. Add curry leaves and hing. Pour this tempering over the ground paste and mix well.
Cook Karuvadam (Optional): For longer shelf-life and enhanced flavor, cook the paste in a pan on low heat for 5–10 minutes. Stir continuously to prevent sticking.
Storage: Store in an airtight container. Refrigerated, it can last up to 1–2 weeks.
Tips for Best Results:
- Use fresh tamarind for tangy flavor and natural acidity.
- Dry roast spices separately to release maximum aroma.
- Grated coconut balances the tanginess of tamarind and adds a creamy texture.
- For a sweeter, balanced flavor, a small amount of jaggery can be added.
- Always store in airtight containers to prevent moisture and spoilage.
