 2 medium potatoes, peeled and cut into cubes

 2 green chilies

 1 tbsp ginger-garlic paste

 1 tsp turmeric powder

 1 tsp crimson chili powder

 1 tbsp coriander powder

 1 tsp garam masala

 2 tbsp oil

 1 tsp mustard seeds

 a few curry leaves

 Salt to flavor

 3 to 4 cups water

 clean coriander leaves for garnish


 instructions:


1. put together the Paya:

   If the usage of paya, strain prepare dinner cleaned trotters with enough water, salt, and turmeric powder until tender (approximately 4-five whistles). If vegetarian, skip this step.


2. cook Potatoes:

   In a pan, warmth oil and upload mustard seeds and curry leaves. when they splutter, sauté onions until golden. add ginger-garlic paste and inexperienced chilies; cook for a minute.


3. add Tomatoes and Spices:
