Ingredients (makes 8–10 doughnuts)

For the Dough:

· 2 cups all-purpose flour

· 2 tbsp sugar

· 1 tsp instant yeast

· ¼ tsp salt

· 2 tbsp unsalted butter, softened

· ½ cup warm milk (110°F / 43°C)

· 1 large egg

· 1 tsp vanilla extract

For Frying:

· 1 cup vegetable oil (for deep frying)

Filling & Topping:

· ½ cup fruit jam or jelly (strawberry, raspberry, or apricot)

· Powdered sugar for dusting

Instructions

1. Prepare the Dough

1. In a small bowl, dissolve yeast and a pinch of sugar in warm milk. Let sit 5–10 minutes until frothy.

2. In a large bowl, mix flour, sugar, and salt.

3. Add the yeast mixture, egg, butter, and vanilla. Knead until smooth and elastic (about 8–10 minutes).

4. Cover the dough and let it rise for 1–2 hours, until doubled in size.

2. Shape the Doughnuts

· Roll the dough to ½-inch thickness.

· Cut into 2–3 inch rounds using a cookie cutter or glass.

· Let them rest for 20 minutes to rise slightly.

3. Fry the Doughnuts

· Heat oil in a deep pan to 350°F (175°C).

· Fry 2–3 doughnuts at a time for 1–2 minutes per side until golden brown.

· Drain on paper towels.

4. Fill & Dust

· Using a piping bag or a small spoon, fill each doughnut with jam.

· Dust generously with powdered sugar.

Tips for Perfect Sufganiyot

· Ensure the oil is at the right temperature: too hot will brown the doughnuts outside and leave raw inside; too cool will make them greasy.

· Do not overfill with jam to avoid spilling during frying.

· For extra flavor, add a pinch of nutmeg or cardamom to the dough.

· For a lighter version, bake at 180°C (350°F) for 12–15 minutes instead of frying.
