· 1 cup whole wheat flour
· 2 tbsp ghee (clarified butter)
· A pinch of salt

Step-by-Step Recipe
1. Cook the Chana Dal
Rinse 1 cup chana dal thoroughly and cook it in water until soft but not mushy. Drain any excess water.
2. Prepare the Filling (Puran)
Mash the cooked dal and cook it with 3/4 cup jaggery on low heat. Stir continuously until the mixture thickens and forms a smooth paste. Add cardamom powder and nutmeg powder. Let it cool.
3. Make the Dough
In a mixing bowl, combine 1 cup wheat flour, 2 tbsp ghee, and a pinch of salt. Gradually add water and knead into a soft, pliable dough. Cover and rest for 20 minutes.
4. Stuff and Roll
Divide the dough and filling into equal portions. Roll out a dough ball slightly, place a portion of the filling in the center, and fold the edges over to seal. Gently roll it into a flat circle (careful not to let the filling spill).
5. Cook the Puran Poli
Heat a griddle or tawa on medium heat. Place the rolled poli and cook for 1–2 minutes on each side, applying ghee until golden brown spots appear. Serve warm.
