
Moongil Arisi (Bamboo Rice) is a rare, seasonal grain harvested from the seeds of bamboo during flowering. It is nutrient-dense, slightly chewy, and naturally aromatic — making it a great alternative to white rice.
🥘 Ingredients (Serves 2–3)
· Moongil Arisi (Bamboo Rice) – 1 cup
· Water – 3 cups (for cooking) + water for soaking
· Salt – to taste
· Ghee / Coconut oil – 1 tsp (optional, for flavor)
👩🍳 Method
1. Soak the Bamboo Rice
· Wash moongil arisi thoroughly 3–4 times.
· Soak in plenty of water for 8–12 hours (overnight soaking gives the best texture).
· Drain the water before cooking.
2. Cook the Rice
· In a pressure cooker, add soaked bamboo rice, 3 cups fresh water, and a pinch of salt.
· Cook for 5–6 whistles on medium flame or until soft but not mushy.
· Alternatively, cook in an open pot until all water is absorbed and grains are tender.
3. Rest & Fluff
· Let pressure release naturally.
· Open the cooker, fluff the rice gently with a fork.
· Drizzle with a tsp of ghee or coconut oil for extra aroma.
4. Serve
· Serve hot with sambar, rasam, curd, or any spicy curry.
· You can also use this rice to make lemon rice, tamarind rice, or coconut rice for variety.
