Ingredients (Serves 1-2)
· 4 slices of whole wheat or multigrain bread
· 1 ripe avocado
· 1 small tomato, finely chopped
· 1 small onion, finely chopped
· 1 small green chili, finely chopped (optional)
· 1 tbsp fresh coriander leaves, chopped
· 1/2 tsp lemon or lime juice
· salt and black pepper, to taste
· 1 tsp olive oil or butter (optional, for toasting)
Method
1. Prepare the Guacamole:
o Scoop out the avocado into a bowl and mash it until smooth.
o Add chopped tomato, onion, green chili, coriander leaves, lemon juice, salt, and pepper. Mix well.
2. Assemble the Sandwich:
o Spread the guacamole evenly on one slice of bread.
o Cover with another slice. Repeat for additional sandwiches.
3. Toast or Serve Fresh:
o For a grilled sandwich, lightly butter the outer sides of the bread and toast in a pan or sandwich maker until golden brown.
o For a fresh version, serve without toasting.
4. Serve:
o Cut diagonally and enjoy with a side of chips, salad, or a light soup.
