🍋 Mango kesari Recipe
Ingredients:
- 1 cup rava (semolina / sooji)
- 1 cup ripe mango pulp (fresh or canned)
- 2 ½ cups water
- ¾ cup sugar (adjust depending on mango sweetness)
- ¼ cup ghee (clarified butter)
- 10–12 cashews
- 10–12 raisins
- ¼ tsp cardamom powder
- A few saffron strands (optional)
🥣 Instructions:
Prepare Mango Pulp:
Peel and cut ripe mangoes. Blend into a smooth puree. You’ll need about 1 cup of pulp.
Choose sweet, non-fibrous varieties like Alphonso, Banganapalli, or Neelam.
Roast Rava:
In a heavy-bottomed pan, heat 1 tbsp of ghee.
Add the rava and roast on low flame until light golden and aromatic. Stir continuously to prevent burning.
Cook Rava:
In another pot, bring water to a gentle boil.
Slowly add roasted rava, stirring continuously to avoid lumps.
Cook on medium heat until the rava absorbs all the water and turns soft.
Add Mango and Sugar:
Add the mango pulp and sugar to the cooked rava. Mix well.
The mixture will loosen up; continue stirring until it thickens again.
Add ghee and Flavor:
Heat the remaining ghee, fry cashews till golden, then add raisins and fry until they puff up.
Add the fried nuts, cardamom powder, and saffron strands to the kesari. Mix thoroughly.
Serve:
Cook until the mixture leaves the sides of the pan and becomes glossy.
Serve warm or chilled, garnished with a few mango slices or nuts.
💡 Tips for Best Results:
- Use Sweet, Ripe Mangoes: Avoid sour ones as they can curdle the kesari.
- Add Mango Pulp After Rava Cooks: This prevents the mixture from turning lumpy.
- Balance Sweetness: Adjust sugar based on mango variety.
- Ghee: Don’t skip ghee — it enhances flavor and gives a glossy finish.
- Avoid Overcooking: Once the mixture thickens and leaves the sides, remove from flame.
- For Extra Aroma: Add a dash of rose water or a pinch of edible camphor.
