🍬 Boondi Laddu Recipe
Ingredients:
- 1 cup gram flour (besan)
- ¾ cup water (for batter)
- 1 ½ cups sugar
- ¾ cup water (for syrup)
- ¼ tsp cardamom powder
- 1 tbsp ghee (for greasing hands)
- A pinch of edible camphor (optional)
- Oil or ghee for deep frying
- 10–12 cashews (chopped)
- 10–12 raisins
- 1 tbsp cloves (optional for aroma)
🧑🍳 Instructions:
Prepare Boondi Batter:
In a bowl, mix gram flour and water to form a smooth, flowing batter without lumps.
The consistency should be similar to dosa batter – not too thin or thick.
Fry Boondi:
Heat oil or ghee in a deep pan.
Hold a perforated ladle (boondi jhara) over the oil and pour some batter on it.
Gently tap the ladle so that small round droplets fall into the oil.
Fry on medium heat until light golden but soft (not crispy). Remove and drain on paper towels.
Repeat with remaining batter.
Prepare sugar Syrup:
In a pan, add sugar and water. Boil until it reaches a one-string consistency (a drop between fingers forms a single thread).
Add cardamom powder and optional edible camphor for aroma.
Combine Boondi and Syrup:
Add the fried boondi to the warm syrup and mix well.
Add fried cashews and raisins. Stir until the syrup coats all boondi evenly.
Let it rest for 10–15 minutes so the boondi absorbs the syrup.
Shape Laddus:
When slightly warm, grease your palms with ghee and shape the mixture into round laddus.
Let them cool completely before storing in an airtight container.
💡 Tips for Perfect Boondi Laddu:
- The batter must be lump-free and of medium consistency.
- Fry boondi on medium flame – too high heat makes them crisp and dry.
- Always mix boondi with warm syrup (not hot or cold) for perfect absorption.
- Use good-quality ghee for authentic taste and aroma.
- Store in an airtight container; they stay fresh for 7–10 days.
- Add a few drops of lemon juice to the syrup to prevent crystallization.
