Ingredients:
- 1 kg vaan kozhi (country chicken), cleaned and cut into pieces
- 2 cups basmati rice
- 3 tbsp oil or ghee
- 2 large onions, thinly sliced
- 2 tomatoes, chopped
- 2 green chilies, slit
- 1 tbsp ginger-garlic paste
- 1 cup yogurt
- 1 tsp turmeric powder
- 1 tbsp red chili powder
- 1 tbsp coriander powder
- 1 tsp garam masala powder
- 1 tsp cumin seeds
- 2 bay leaves
- 5-6 cloves
- 4-5 green cardamoms
- 1-inch cinnamon stick
- Salt to taste
- 1/2 cup chopped coriander leaves
- 1/2 cup chopped mint leaves
- Juice of one lemon
- Water as needed
Instructions:
1. Prepare Rice: Rinse basmati rice until water runs clear, soak for 30 minutes. Boil water with salt and whole spices (bay leaves, cloves, cardamoms, cinnamon). Add rice and cook until 70% done. Drain and set aside.
2. Cook chicken Masala: Heat oil or ghee in a heavy pan. Add cumin seeds and sliced onions, sauté until golden brown. Add ginger-garlic paste and green chilies; cook until raw smell disappears.
3. Add Tomatoes & Spices: Add tomatoes and cook until soft. Mix turmeric, red chili powder, coriander powder, and salt. Cook until oil separates.
4. Add Chicken: Add country chicken pieces and sauté for 5-7 minutes.
5. Add Yogurt & Cook: Lower heat and add yogurt, garam masala, half the coriander, and mint leaves. Cover and cook until chicken is tender (about 30-40 minutes). Add water as needed for cooking.
6. Layering: In a heavy-bottomed pot, spread half the chicken masala, then half the rice. Repeat the layers.
7. Dum Cooking: Cover tightly with a lid and cook on low heat for 20 minutes to allow flavors to meld.
8. Finishing Touch: Sprinkle remaining coriander, mint, and lemon juice. Fluff gently.
9. Serve: Serve hot with raita, salad, or boiled eggs.
