
Andhra Style stuffed brinjal Fry (Gutthi Vankaya Fry) Recipe
Ingredients:
For the Brinjals:
Small brinjals (eggplants) – 6–8
Oil – 2–3 tablespoons
For the Stuffing:
Roasted peanuts – 2 tablespoons
Grated coconut – 2 tablespoons
Chana dal (split bengal gram) – 1 tablespoon
Dry red chilies – 4–5
Coriander seeds – 1 teaspoon
Cumin seeds – ½ teaspoon
Tamarind paste – 1 teaspoon
Turmeric powder – ¼ teaspoon
Jaggery – ½ teaspoon (optional)
Salt – to taste
Oil – 1 teaspoon
For Tempering:
Mustard seeds – ½ teaspoon
Curry leaves – 1 sprig
Preparation:
Wash the brinjals and make slits from the bottom to the top, keeping the stem intact. The brinjals should remain whole but slit enough to stuff the filling.
For the stuffing, dry roast peanuts, chana dal, coriander seeds, cumin seeds, and dry red chilies until aromatic. Grind them into a coarse powder along with grated coconut, tamarind paste, turmeric powder, jaggery, and salt, adding a little water if needed to form a thick paste.
Stuff each brinjal carefully with the prepared mixture. Don’t overstuff, or the brinjals may break while cooking.
Heat 2–3 tablespoons of oil in a pan. Place the stuffed brinjals carefully and cook on low-medium heat. Cover and cook for 10–12 minutes, turning occasionally so that all sides are evenly cooked.
In a small pan, heat 1 teaspoon oil, add mustard seeds and curry leaves, and pour this tempering over the cooked brinjals.
Serve Andhra style stuffed brinjal fry hot with steamed rice, rasam, or dal.
