Payasam is a staple dessert in Kerala, often prepared during festivals and special occasions. Among the many varieties, Jackfruit Semiya Payasam stands out for its fruity aroma, creamy texture, and festive charm. Combining semiya (vermicelli) with ripe jackfruit and aromatic spices, this dessert is both simple to make and irresistible to eat.

1 Ingredients You’ll Need

  • 1 cup semiya (vermicelli)
  • 1 cup ripe jackfruit pods, chopped
  • 4 cups milk (full cream preferred)
  • ¾ cup sugar (adjust to taste)
  • 2 tbsp ghee
  • 6–8 cashew nuts
  • 6–8 raisins
  • 3–4 cardamom pods, crushed
  • 1 tsp grated coconut (optional, for garnish)

2 Step 1: Roast the Semiya

  • Heat 1 tbsp ghee in a pan.
  • Add the semiya and roast on low flame until it turns light golden brown.
  • Keep stirring continuously to avoid burning.

3 Step 2: Cook in Milk

  • Boil milk in a separate pan.
  • Once it comes to a boil, reduce the flame and add roasted semiya gradually.
  • Cook on low heat, stirring occasionally, until the semiya softens and absorbs the milk.

4 Step 3: Add Jackfruit and Sugar

  • Add the chopped jackfruit pods to the semiya-milk mixture.
  • Mix well and cook for 3–5 minutes.
  • Add sugar and continue stirring until it dissolves completely.

5 Step 4: temper with ghee and Nuts

  • In a small pan, heat 1 tbsp ghee.
  • Fry cashews and raisins until golden.
  • Add them to the payasam along with crushed cardamom pods for aromatic flavor.

6 Step 5: Garnish & Serve

  • Optionally, sprinkle grated coconut on top.
  • Serve warm or chilled, depending on preference.

 Bonus Tip: Make It Richer

  • For a creamier texture, use half milk and half coconut milk.
  • Adjust sweetness according to jackfruit ripeness for natural flavor balance.
