Poondu (Garlic) Chutney Recipe

Ingredients:

  • 10–12 garlic cloves
  • 4–5 dried red chilies (adjust to taste)
  • 2 tbsp grated coconut (optional)
  • 1 tsp tamarind pulp
  • ½ tsp salt (or to taste)
  • 1 tsp oil
  • ½ tsp mustard seeds
  • A few curry leaves
  • A pinch of asafoetida (hing)

Instructions:

Roast garlic & Chilies: Peel the garlic cloves. Dry roast the garlic and red chilies lightly for 1–2 minutes to release aroma. This enhances flavor and reduces raw pungency.

Blend Chutney: In a blender, combine roasted garlic, red chilies, tamarind pulp, grated coconut (if using), and salt. Grind to a smooth or slightly coarse paste, adding a little water if necessary.

Tempering (Tadka): Heat oil in a small pan. Add mustard seeds. Once they splutter, add curry leaves and a pinch of hing. Pour this tempering over the chutney and mix well.

Serve: Serve fresh with dosa, idli, rice, or as a side with snacks.

Tips for Best Results:

  • Adjust red chilies according to your spice tolerance.
  • Lightly roasting garlic reduces its sharpness and brings a nutty flavor.
  • Adding grated coconut balances the pungent flavor of garlic and adds a creamy texture.
  • Fresh tamarind pulp enhances the tanginess naturally.
  • Consume the chutney fresh for maximum flavor; store in an airtight container in the refrigerator for 1–2 days.
