Sambar Podi Recipe

Ingredients:

  • 1 cup chana dal (Bengal gram)
  • ½ cup toor dal (pigeon peas)
  • ½ cup coriander seeds
  • 2–3 tbsp dried red chilies (adjust to taste)
  • 2 tsp black peppercorns
  • 1 tsp cumin seeds
  • 1 tsp fenugreek seeds
  • ½ tsp turmeric powder
  • 1 tsp hing (asafoetida)

Instructions:

Roast Dals: Dry roast chana dal and toor dal separately on medium heat until they turn golden brown and emit a nutty aroma. Cool them completely.

Roast Spices: Dry roast coriander seeds, dried red chilies, black pepper, cumin seeds, and fenugreek seeds until aromatic. Be careful not to burn them as it can cause bitterness.

Combine & Grind: Once cooled, combine roasted dals and spices in a blender or spice grinder. Add turmeric powder and hing. Grind into a fine or slightly coarse powder according to preference.

Store: Transfer the sambar podi into an airtight container. Store in a cool, dry place. It can last for 3–4 months without refrigeration.
