Ingredients (Serves 2)

· 4 slices of bread (whole wheat or multigrain preferred)

· 2–3 slices of cheese (processed or cheddar; can use low-fat cheese)

· 1 small tomato, thinly sliced

· 1 small cucumber, thinly sliced

· 1 small carrot, grated (optional)

· 1 small onion, thinly sliced (optional)

· 1 tsp butter or olive oil (optional, for grilling)

· salt and pepper to taste

· Green chutney or tomato ketchup (optional)

Instructions

1. Prepare the Veggies:

· Wash and slice tomato, cucumber, carrot, and onion.

· Keep them ready for layering on the bread.

2. Assemble the Sandwich:

· Take a slice of bread and spread a thin layer of butter or green chutney (optional).

· Place cheese slice(s) on the bread.

· Layer tomato, cucumber, carrot, and onion over the cheese.

· Sprinkle a pinch of salt and pepper.

· Cover with another slice of bread.

3. Toast (Optional):

· Grill the sandwich in a sandwich maker, pan, or oven for 3–5 minutes until the cheese melts and the bread turns golden brown.

4. Serve:

· Cut diagonally and serve with ketchup or green chutney.
