Ingredients (Serves 1)

· 2 slices of whole wheat or multigrain bread

· 2 eggs

· 1 small onion, finely chopped

· 1 small tomato, finely chopped

· 1 green chili, finely chopped (optional)

· A few coriander leaves, chopped

· salt and pepper to taste

· 1 tsp butter or olive oil

· 1 slice of cheese (optional)

Method

1. Prepare the Omelet:

o In a bowl, beat the eggs with salt, pepper, and chopped vegetables (onion, tomato, chili, coriander).

o Heat a non-stick pan, add butter or oil, and pour the egg mixture. Cook until the omelet is set on both sides.

2. Toast the Bread:

o Toast the bread slices lightly in a pan or toaster. Optionally, spread a little butter or mayonnaise.

3. Assemble the Sandwich:

o Place the cooked omelet on one slice of bread.

o Add a slice of cheese if desired.

o Cover with the second slice of bread. press gently.

4. Serve Hot:

o Cut diagonally and serve with tomato ketchup or green chutney.

Tips

· Add bell peppers, mushrooms, or spinach for extra nutrition.

· Use whole wheat or multigrain bread to increase fiber content.

· Avoid too much butter to keep it heart-healthy.
