Ingredients (Serves 1-2)

· 4 slices of whole wheat or multigrain bread

· 1 cup mushrooms, finely chopped or sliced

· 1 small onion, finely chopped

· 1 small tomato, finely chopped

· 1 green chili, finely chopped (optional)

· 1 tsp olive oil or butter

· 1/4 tsp black pepper

· 1/4 tsp salt (adjust to taste)

· 1/2 tsp garlic paste (optional)

· 1 slice of cheese (optional)

· Fresh coriander leaves for garnish

Method

1. Cook the Mushrooms:

o Heat olive oil or butter in a pan.

o Add garlic paste and sauté for 30 seconds.

o Add onions and cook until translucent.

o Add mushrooms, salt, and pepper. Cook until mushrooms release water and it evaporates, leaving them soft and slightly golden.

o Stir in chopped tomato and cook for another 1-2 minutes. Garnish with coriander leaves.

2. Toast the Bread:

o Lightly toast the bread slices in a pan or toaster. You can spread a thin layer of butter or mayonnaise.

3. Assemble the Sandwich:

o Place the cooked mushroom mixture on a slice of bread.

o Add a slice of cheese if desired.

o Cover with another slice of bread. press gently and cut diagonally.

4. Serve Hot:

o Enjoy with tomato ketchup or green chutney.

· Add bell peppers, spinach, or grated carrot for extra nutrition.

· Use whole wheat or multigrain bread for more fiber.

· Avoid excessive butter or oil to keep it light and healthy.
