· 4 slices of whole wheat or multigrain bread
· 2 medium ripe tomatoes, sliced
· 1 cup grated mozzarella or cheddar cheese
· 1 tsp olive oil
· 1/4 tsp salt
· 1/4 tsp black pepper
· 1/2 tsp dried oregano or Italian herbs
· 1 tsp butter (optional)
· Fresh basil or coriander leaves for garnish
Method
1. Roast the Tomatoes:
o Preheat oven to 180°C (350°F) or use a stovetop grill pan.
o Place tomato slices on a baking tray, drizzle with olive oil, sprinkle salt, pepper, and oregano.
o Roast for 10–12 minutes until tomatoes are slightly charred and soft.
2. Prepare the Bread:
o Lightly butter the bread slices (optional).
o Preheat a pan or sandwich maker.
3. Assemble the Sandwich:
o Place roasted tomato slices on a bread slice.
o Sprinkle generous amount of grated cheese.
o Cover with another slice of bread.
4. Grill or Toast:
o Grill the sandwich on a pan or sandwich maker until the cheese melts and the bread is golden brown.
5. Serve Hot:
o Cut diagonally and garnish with fresh basil or coriander. Serve with green chutney or ketchup.
