Kara Chutney Recipe
Ingredients:
- 6–8 dried red chilies (adjust to taste)
- 2–3 garlic cloves
- 1 small piece of ginger
- 2 tbsp grated coconut (optional)
- 1 tsp tamarind pulp
- ½ tsp salt (or to taste)
- 1 tsp oil
- ½ tsp mustard seeds
- A few curry leaves
- A pinch of asafoetida (hing)
Instructions:
Roast Chilies & Garlic: Dry roast dried red chilies lightly for 1–2 minutes to release their aroma. Lightly roast garlic cloves and ginger for a mild smoky flavor.
Blend Chutney: In a blender, combine roasted red chilies, garlic, ginger, tamarind pulp, grated coconut (if using), and salt. Grind into a smooth or slightly coarse paste, adding a little water if needed.
Tempering (Tadka): Heat oil in a small pan. Add mustard seeds. Once they splutter, add curry leaves and a pinch of hing. Pour the tempering over the chutney and mix well.
Serve: Serve fresh with idli, dosa, rice, or snacks.
Tips for Best Results:
- Adjust the number of dried red chilies according to your spice tolerance.
- Lightly roasting the spices enhances the aroma and flavor of the chutney.
- Adding coconut balances the spiciness and adds a creamy texture.
- Use fresh tamarind pulp for a tangy, natural flavor.
