Leftover idlis don’t have to go to waste! With a few simple ingredients, you can turn soft, plain idlis into a flavorful, spicy snack that’s perfect for breakfast, tea-time, or a quick bite. This “Masala Idli” recipe is easy, versatile, and guaranteed to delight your taste buds.

Ingredients

For 4–5 idlis:

4–5 leftover idlis, cut into cubes

1 small onion, finely chopped

1 small tomato, chopped

1–2 green chilies, finely chopped

1/2 teaspoon mustard seeds

1/2 teaspoon cumin seeds

1/4 teaspoon turmeric powder

1/2 teaspoon red chili powder (adjust to taste)

1/2 teaspoon garam masala (optional)

5–6 curry leaves

1 tablespoon oil

Salt to taste

Fresh coriander leaves for garnish

Optional: A splash of lemon juice or a sprinkle of grated coconut for extra flavor

Instructions

1. Prepare the Idlis

Cut leftover idlis into small cubes or bite-sized pieces.

If desired, lightly toast them in a pan with 1 teaspoon oil until slightly golden for extra texture.

2. Sauté the Aromatics

Heat 1 tablespoon of oil in a pan over medium heat.

Add mustard seeds and cumin seeds; let them splutter.

Add curry leaves and green chilies, sauté for 30 seconds.

Add chopped onions and sauté until they turn translucent.

3. Add Spices and Tomato

Add turmeric, red chili powder, and garam masala (if using).

Stir well for 20–30 seconds.

Add chopped tomato and cook until soft and pulpy.

Add salt to taste.

4. Mix in Idli Cubes

Add the idli cubes to the masala mixture.

Gently toss so that the spices coat the idlis evenly.

Cook for 3–4 minutes, stirring occasionally, until the idlis absorb the flavors.

5. Garnish and Serve

Turn off the heat.

Sprinkle fresh coriander leaves and a little lemon juice if desired.

Serve hot as a snack or a quick breakfast.

Tips to Enhance masala Idli

Crispier texture: Shallow fry the idli cubes lightly before adding spices.
