Ingredients:

  • 25 Baby potatoes
  • 1 tsp Red chilli powder
  • 1 tsp Coriander powder
  • 1/2 tsp Roasted jeera powder
  • A pinch Hing powder
  • Salt to taste
  • 2 tbsp Oil
  • Curry leaves


Method:

  • Wash and cook baby potatoes so that it is soft but not over cooked.
  • It should retain its shape so that it does not get mushy while stir frying.
  • Peel off the skin and make sure that moisture is not present before marination.
  • Add all the spice powders and mix gently so that it is coated all over.
  • Add just a teaspoon of oil and mix with spiced potatoes.
  • Let it get marinated for an hour in refrigerator.
  • Heat a heavy bottomed pan and put 2 table spoons of oil.
  • Put marinated baby potatoes and curry leaves and fry in medium low flame.
  • Stir now and then to prevent it from getting burnt.
  • Fry till it gets crispy and turn nice golden brown.
  • Baby potato stir fry is ready.Serve with rice and dhal.
  • You can have it as a starter also.
  • If you are going to prepare it for guests you can do the marination previous day and keep it overnight in refrigerator. 
  • Healthy and no guilt starter snack since it is not deep fried.
