Ingredients

For the coconut barfi:

· 2 cups grated fresh or desiccated coconut

· 1 cup condensed milk

· ¼ cup milk

· ¼ cup sugar (adjust to taste)

· 2 tbsp ghee (clarified butter)

· ¼ tsp cardamom powder

For the rose flavoring and decoration:

· 1–2 tsp rose water

· A few drops pink food color (optional)

· Chopped pistachios or almonds for garnish

· Mini cupcake liners or silicone molds

Instructions

1. Prepare the base:

o Heat 2 tbsp ghee in a non-stick pan on low-medium flame.

o Add grated coconut and lightly roast for 2–3 minutes, stirring continuously.

2. Cook the barfi mixture:

o Add condensed milk, milk, sugar, and cardamom powder.

o Cook on low flame, stirring constantly, until the mixture thickens and leaves the sides of the pan (around 8–10 minutes).

o Remove from heat and let it cool slightly.

3. Add rose flavor and color:

o Mix in rose water.

o If you want a pink hue, add a few drops of pink food color and mix well.

4. Form the cups:

o Grease mini cupcake liners or silicone molds lightly with ghee.

o Spoon the warm barfi mixture into each cup, pressing gently to form a smooth top.

o Garnish with chopped pistachios or almonds.

5. Set and serve:

o Let the cups cool at room temperature for 1–2 hours or refrigerate for 30–40 minutes to firm up.

o Carefully remove the liners or serve directly in silicone molds.

Tips for a festive touch:

· Sprinkle edible silver leaf (varak) for a traditional New Year sparkle.

· Add a few dried rose petals on top for a delicate, elegant look.

· For variation, mix in some finely chopped dried fruits into the barfi before setting.
