She worked with upasana Konidela on an Ur Life episode during the pandemic and featured a unique vegan dessert recipe created by Aditi Mammen Gupta.  In addition to being scrumptious, the celebrity made a lovely filter coffee chia pudding that is high in fiber and vegan. It's a fantastic choice for coffee lovers and those seeking a nutritious treat because it's the ideal combination of coffee and chocolate. Made with coconut milk, it is dairy-free, simple to prepare, and suitable for both breakfast and dessert.

Ingredients:

1/4 cup chia seeds

1/4 cup maple syrup or jaggery syrup

1/2 cup coconut milk

2 tablespoons filter coffee or instant coffee decoction

2 tablespoons cocoa powder


Method

This easy recipe takes around 20 minutes to prepare and is best served cold after resting in the fridge overnight.  It is inexpensive, high in fiber, and only has 146 calories per serving.
 
Put the chia seeds, coconut milk, coffee infusion, cocoa powder, and your preferred syrup in a big bowl.
 
Mix thoroughly until all of the ingredients are combined.
 
To get the right consistency, add a few tablespoons of water if the mixture seems too thick.


Refrigerate the mixture overnight with the bowl covered.  This makes it possible for the chia seeds to absorb the liquid and develop a viscous, pudding-like consistency.
 
Serve the pudding in dishes or little glasses the following day.  For texture and taste, sprinkle your preferred chopped dried fruits, granola, or chocolate chips on top.

In the same video, Dr. lakshmi K. emphasized the recipe's health advantages, pointing out that each serving only has 146 calories.  She went on to say that drinking two cups of coffee daily is thought to lower the chances of dementia and Alzheimer's.
 
Jaggery or maple syrup are also excellent choices for the pudding's sweeteners.  Particularly high in iron, jaggery can help lower anemia. The doctor also noted that there are only 6.9 calories of good fat in the meal.
