Nellikai (Amla) Chutney Recipe
Ingredients:
- 8–10 fresh nellikai (Indian gooseberries)
- 2–3 dried red chilies (adjust to taste)
- 1 small piece of ginger
- 1 tsp tamarind pulp
- 1–2 tsp jaggery (optional, balances sourness)
- ½ tsp salt (or to taste)
- 1 tsp oil
- ½ tsp mustard seeds
- A pinch of asafoetida (hing)
- Curry leaves
Instructions:
Prepare Amla: Wash and deseed the nellikai. Cut them into small pieces.
Roast Spices: Dry roast the red chilies lightly for a minute to bring out aroma.
Blend Chutney: In a blender, add chopped nellikai, roasted red chilies, ginger, tamarind pulp, jaggery, and salt. Grind into a smooth paste. Add a little water if necessary.
Tempering (Tadka): Heat oil in a small pan. Add mustard seeds. When they splutter, add curry leaves and a pinch of hing. Pour this tempering over the chutney and mix well.
Serve: Serve fresh with dosa, idli, rice, or as a side with meals.
Tips for Best Results:
- Use fresh, firm nellikai for tangy and vibrant chutney.
- Adjust red chilies according to your spice tolerance; dry roast them for a smoky flavor.
- Jaggery balances the sourness naturally; skip if you prefer tangy.
- Prepare in small batches; fresh chutney retains more nutrients.
- Store in an airtight container in the refrigerator for 2–3 days.
