1 medium tomato, finely chopped or pureed
1/2 tsp cumin seeds
1/2 tsp turmeric powder
1 tsp red chili powder
1 tsp garam masala
1 tsp coriander powder
1/2 tsp chaat masala (optional)
Salt to taste
1/2 cup capsicum (bell pepper), diced
1/2 cup carrot, diced
1/4 cup peas
1/4 cup coriander leaves, chopped (for garnish)
1/4 cup grated cheese (optional)
Instructions
Cook the Pasta:
Boil water in a large pot with 1 tsp salt.
Add pasta and cook until al dente according to package instructions.
Drain, toss with 1 tsp oil to prevent sticking, and set aside.
Prepare the Masala:
Heat oil or butter in a pan over medium heat.
Add cumin seeds and let them splutter.
Add onions and sauté until golden brown.
Add garlic and green chili, sauté for 30 seconds.
Add tomatoes and cook until they turn soft and mushy.
Add Spices and Vegetables:
Add turmeric powder, red chili powder, garam masala, coriander powder, and salt. Mix well.
Add capsicum, carrot, and peas. Cook for 5–6 minutes until vegetables are slightly tender.
Combine pasta with Masala:
Add cooked pasta to the masala and toss well so that pasta is coated evenly with the spice mixture.
Adjust seasoning as needed.
Garnish and Serve:
Sprinkle chaat masala (optional) and grated cheese on top.
Garnish with fresh coriander leaves.
Serve hot with tomato ketchup or green chutney on the side.
